Abstract:
In this paper, acetone is used as the extraction agent, and the transmittance of each extract is determined according to the mathematical formula of color value E and transmittance T. According to the comparison of the transmittance of the extract, indicates the extent to which the solution was extracted paprika red. The optimized process conditions were put forward by the main experiment. The yield of the product reached 3.5%, the color value E = 161, and the product quality exceeded the domestic and foreign standards.

Abstract:
The organic reflux extraction and supercritical carbon dioxide extraction of Capsanthin were studied. The extraction conditions, pigment yield, sensory quality and product stability were compared: supercritical carbon dioxide extraction is superior to traditional solvent extraction.
